Tomatillo vinagrette

Ingredients

  • 1 lb Tomatillos
  • 2 tbsp vinegar(preferably white)
  • 4 tbsp Canola oil(more or less, adjust to your taste)
  • 1/2 tbsp Kosher salt
  • 1 Jalepeno(seeded and chopped)
  • 1/2 tsp ground black pepper

Directions

    Peel the tomatillo skin off(if present) and rinse thoroughly.

    Quarter tomatillos and drop into food processor along with the minced garlic, vinegar and jalepeno.

    Blend ingredients and add oil slowly while doing so, until it is a nice relatively pureed texture.

    Taste dressing, add salt & pepper and blend well, if desired.
