Tomato And Herring Bruschetta

- 4 slices sourdough bread
- 1 clove garlic, peeled and halved
- 4 None herring fillets
- 4 tbsp breadcrumbs
- 5 tbsp oil
- 1 None onion, peeled and diced
- 7 oz red cherry tomatoes, halved
- 7 oz yellow cherry tomatoes, halved
- 1 tbsp brown sugar
- 1 tsp fennel seeds
- 1 tbsp butter
Directions

1Rub the bread with the garlic, then finely chop the garlic. Roll the herring in the breadcrumbs.

2Heat 1 tbsp oil in a frying pan and fry the garlic, onion and tomatoes for 1 min. Add the sugar and fennel and saute for 1-2 mins. Season to taste.

3In a separate frying pan, heat the butter and 2 tbsp oil and fry the bread until golden brown on both sides. Remove from the pan and drain on paper towels. Add 2 tbsp oil to the pan and heat. Fry the herring until crispy on both sides. Drain on paper towels. Spoon the tomato mixture over the bread and top each with a herring fillet.
