  • 4 None apricot halves, from a tin
  • 2 tbsp apricot juice
  • 50 ml tomato juice
  • 50 ml lemon juice
  • 50-100 ml sparkling water

Directions

    Place the apricot halves and apricot juice in a blender and puree until smooth.

    Pour into a cocktail glass with ice, add tomato juice and lemon juice and top with sparkling water.
