Tomato-Broccoli Chicken

- 2 whole medium chicken breasts, skinned, boned and halved lengthwise
- 1/4 c. chopped onion
- 2 Tbsp. butter or margarine
- 1 (10 oz.) pkg. frozen cut broccoli, thawed
- 1 tsp. lemon juice
- 1/4 tsp. dried thyme, crushed
- 3 medium tomatoes, cut into wedges
Directions

1Sprinkle chicken lightly with a little salt and pepper.

2Cut chicken into 1/2-inch wide strips.

3In medium skillet, cook chicken and onion in butter or margarine until chicken no longer is pink.

4Stir in broccoli, lemon juice, thyme, 3/4 teaspoon salt and 1/8 teaspoon pepper.

5Cover and simmer 6 minutes.

6Add tomatoes and simmer, covered, for 3 to 4 minutes more.

7Makes 4 servings.
