  • 1 (9-inch) pie crust, browned
  • sliced, fresh tomatoes, seasoned with salt, pepper and basil
  • 1/2 c. mayonnaise
  • 1/2 c. shredded Monterey Jack cheese
  • 1/2 c. Cheddar cheese (mild)
  • diced onions (added with tomatoes optional)

Directions

    Lay sliced tomatoes on bottom of pie crust.

    Mix together the mayonnaise and cheeses.

    Fill pie shell with mixture.

    Sprinkle with 1/4 cup of Parmesan cheese.

    Bake at 375° until golden brown.
