- 2 tbls olive oil
- 2 tsp black mustard seeds
- 2 tsp tumeric
- 2 tsp ground cumin
- 2 long red chillies finely chopped
- 2 tbls grated fresh ginger
- 2 garlic cloves crushed
- 800g (1lb 12oz) tinned chopped tomatoes
- 100ml (3.5fl oz) malt vinegar
- 85g (3oz) brown sugar
- a pinch of sea salt
Directions

1Heat the oil in a large saucepan over medium high heat. Add the mustard seeds, tumeric and cumin and cook, stirring for 3-4 minutes until fragrant. Add the chilli, ginger and garlic and cook further 2-3 minutes. Add the tomatoes, vinegar, sugar and salt and simmer, stirring occasionally for an hour until thick.
