  • 2 tablespoons flour
  • 2 tablespoons oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 12 bell pepper, chopped
  • 1 (16 ounce) can whole tomatoes, chopped
  • 1 cup water
  • 1 pinch salt
  • 1 pinch cayenne pepper
  • 1 pinch sugar

Directions

    Make a light brown roux with flour and oil; add onion,garlic and bell pepper and cook until onions are transparent.

    Add tomatoes and continue to cook until oil rises to the top, about 20 or 30 minutes; add water, cayenne pepper and sugar and simmer about 30 minutes.
