  • 2 1/2 lb. ripe tomatoes
  • 1 tsp. grated lemon peel
  • 1/4 c. lemon juice
  • 1/4 tsp. salt
  • 1 Tbsp. mixed pickling spices
  • 5 c. sugar
  • 1 1/3 bottles Certo

Directions

    Peel, core and cut tomatoes into 1 1/2-inch pieces and put into a large saucepan.

    Add lemon peel, juice and salt.

    Tie spices in cheesecloth bag and add.

    Stir in sugar; boil.

    Add Certo and bring to a rolling boil for 1 minute.

    Stir constantly. Remove from heat.

    Let stand for 5 minutes and put into hot, sterilized jars.
