  • 1 pint grape tomatoes, halved
  • 1 tablespoon olive oil
  • 2 tablespoons sugar
  • 1 lemon, juice of

Directions

    Place everything in a saucepan over high heat.

    Bring to a boil, then reduce heat to medium-low and simmer 30 minutes, until most of the liquid has evaporated and the jam is quite thick.

    Cool to room temperature before serving.
