Ingredients

  • 1 precooked pie shell
  • 4 tomatoes
  • 1 c. basil (fresh and chopped)
  • 1/4 lb. Mozzarella
  • 1 2/3 c. Ricotta
  • 1/2 c. grated Parmesan
  • 2 eggs, slightly beaten
  • 1 1/2 tsp. salt

Directions

    Slice tomatoes in thirds; sprinkle with 1 1/2 teaspoons salt and lay on paper towels to drain. Layer tomatoes and other ingredients in pie shell.

    Bake at 350° for 40 to 50 minutes. Serve warm.
