Tomato Pilaf

Ingredients
- 1 vegetable bouillon cube
- 1 c. rice
- 1 small can peeled whole tomatoes
- 1 small can crushed tomatoes
- 3 Tbsp. butter
- salt and pepper to taste
- 2 medium size zucchini, sliced
Directions

1Boil rice in water as directed but add the bouillon cube so the rice will absorb the flavor.

2Fry the zucchini in 1 tablespoon butter until slightly brown.

3Combine the tomatoes in a separate pot and bring to a boil.

4Add butter and salt and pepper.

5Combine the zucchini and the tomato sauce.

6Add the cooked rice and bring to a final boil.

7Season with salt and pepper as desired and serve.

8Serves 2 to 4.

9This can be reheated using tomato juice to moisten.
