Tomato Pudding

Ingredients

  • 2 qt. whole tomatoes
  • 1 or 2 loaves day-old bread
  • 1/2 stick butter
  • salt
  • pepper

Directions

    Blend, stir or squeeze tomatoes into small pieces.

    Put in a pot and simmer.

    Add butter, salt and pepper to taste.
  4. 4
    Crumble bread into small pieces.
  5. 5
    Stir in tomatoes until mixture is very moist and very thick.

    Butter pan and pour mixture into it.

    Bake at 350° to 400° until firm and top is slightly brown.

    (Leftover biscuits may be used in place of loaf bread.)
