Ingredients

  • 4 qt. tomatoes, peeled and chopped
  • 1 small onion, sliced
  • 1 stalk celery or leaves, chopped
  • 1 bay leaf
  • 1 tsp. salt
  • 1/4 tsp. paprika

Directions

    Place all ingredients in a large kettle.

    Cook over medium heat until tomatoes are tender.

    Remove bay leaf.

    Force through strainer or process in blender.

    Return tomato mixture to heat and cook until reduced to half the original volume.

    Pour into hot sterilized jars and seal.

    Yields 3 pints.
