Ingredients
- 6 ripe medium tomatoes
- 1 Vidalia (sweet) onion
- 2 1/2 Tbsp. extra virgin olive oil
- 1 Tbsp. lemon juice
- 1 clove garlic, peeled and finely chopped
- 2 Tbsp. each: chopped fresh tarragon, basil and parsley
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1Place the tomatoes in a pan of boiling water for 2 minutes; drain and rinse with cold water.

2Peel and thinly slice.

3Place in a bowl with onion.

4In a small bowl, mix remaining ingredients. Pour over the tomatoes.

5Let stand at room temperature for 15 minutes.

6Accompany with hot French rolls or Italian bread.

7Makes 4 to 6 servings.
