Tomato Soup

  • 8 c. chicken broth
  • 3 lb. tomatoes, peeled and chopped
  • 1 small onion, chopped
  • 1/2 tsp. salt
  • pinch of sugar
  • 2 Tbsp. chopped fresh basil or parsley

Directions

    Bring broth to a boil.

    Add tomatoes, onion, salt and sugar. Cover, reduce heat to medium-low and cook for 30 minutes.

    Puree soup in batches in a blender or food processor.

    Return soup to pot; simmer for 2 minutes.

    Stir in basil just before serving.
