- 6 tablespoons butter
- 2 medium onions (chopped)
- 2 garlic cloves
- 2 teaspoons salt
- 14 teaspoon pepper
- 28 ounces canned tomatoes
- 3 cups chicken stock
Directions

1Melt butter in skillet, add onions, garlic, salt and saute until onions are caramelized.

2Add pepper, tomatoes and chicken stock, bring to a boil and simmer for 20 minutes or longer.

3Transfer a little at a time to a blender to puree or use a hand held blender stick to puree.

4Top with a sprinkle of cheese and enjoy.
