Ingredients
- 2 medium onions, chopped
- 3 Tbsp. butter
- 2 cloves garlic, crushed
- 6 c. chicken stock
- 1/2 c. raw rice (not Minute)
- 3 medium tomatoes
- 1 c. tomato juice
- 1 bunch basil, finely chopped
Directions

1Saute onions in butter in 4-quart soup pot until transparent. Add garlic and cook 1 minute.

2Add stock; bring to a boil and add rice.

3Cover and simmer for 30 minutes.

4Peel and dice tomatoes and add to pot along with tomato juice and chopped basil.

5Cook over low heat another 15 minutes.

6Add salt to taste.

7Serves 6.
