  • 3 large ripe tomatoes, cut in half
  • 2 Tbsp. finely chopped onion
  • 2 Tbsp. finely chopped parsley
  • 1 Tbsp. margarine
  • 3/4 c. chopped cooked spinach, drained
  • freshly ground black pepper
  • paprika
  • 2 Tbsp. Italian seasoned bread crumbs

Directions

    Place tomatoes, cut side up, in an oiled baking dish.

    Combine onion, parsley, margarine, spinach, pepper and paprika. Spread evenly over the tomatoes. Top with crumbs and bake at 375° for 15 minutes.
