Tomatoes With Tuna

Ingredients

  • 4 large tomatoes
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 medium can tuna fish, flaked
  • 4 anchovy filets, chopped
  • 1 Tbsp. chopped parsley
  • 1/2 tsp. chopped basil
  • 2 slices bread, soaked in water and squeezed dry
  • 2 cloves garlic, chopped
  • 1/2+ tsp. oregano
  • 2 Tbsp. butter, softened

Directions

    Cut tops off tomatoes and scoop out pulp.

    Strain pulp and mix with salt, pepper, tuna, anchovies, parsley, basil, bread, garlic, oregano and butter.

    Mix well and stuff tomatoes with mixture.

    Place tomatoes in well-oiled baking dish and bake in moderate oven (375°) for 20 minutes, adding more oil, if needed. Serves 4.
