Tuna 'N Rice Dinner

- 1 Tbsp. butter or margarine
- 1 c. chopped onion
- 1 pkg. (10 oz.) frozen peas and carrots, thawed
- 1 1/2 c. milk
- 1 (10 3/4 oz.) can cream of chicken soup
- 1/8 tsp. pepper
- 1 (12 1/2 oz. or 9 1/4 oz.) can Star-Kist tuna, drained
- 1 1/2 c. Minute original rice, uncooked
- 2 Tbsp. minced parsley
- 1/3 c. toasted sliced almonds (optional)
Directions

1Melt margarine in large skillet on medium-high heat.

2Add onion; cook and stir until tender but not browned.

3Stir in vegetables, milk, soup and pepper.

4Bring to boil.

5Stir in tuna, rice and parsley; cover.

6Remove from heat.

7Let stand 5 minutes. Stir.

8Garnish with almonds (if desired).

9Makes 4 to 6 servings.
