  • 2 pkg. cheese crackers
  • 1 tin (8 oz.) tuna, drained
  • 4 eggs
  • 1 small onion, chopped
  • 2 c. milk
  • 1 c. grated cheese
  • 1/4 c. chopped parsley
  • 3 Tbsp. margarine, melted

Directions

    Crush crackers, reserving 1 cup for topping.

    Mix melted margarine into remainder of crushed crackers; mix well.

    Press this into a medium sized pie dish, ensuring that you cover the sides of the pie dish as well as the bottom.

    Refrigerate the dish so as the base can set before adding the filling.

    Fry onion and parsley for a few minutes.

    Beat together eggs and milk, then add the tuna, cheese, onion and parsley, stirring well to blend.

    Pour mixture into pie dish.

    Sprinkle reserved crackers over the top. Bake at 350°F, 180°C for approximately 1 hour until golden brown. Serve cool with salad.
