  • 1/2 cups Quinoa, Cooked According To Package Directions
  • 1/2 Tablespoons Olive Oil
  • 2 Tablespoons Onion, Chopped Fine
  • 2 teaspoons Garlic, Minced
  • 1 cup Mushrooms, Chopped
  • 4 cups Spinach, Raw
  • 1/4 teaspoons Salt
  • 1/2 teaspoons Ground Black Pepper
  • 1 cup Tuna, Packed In Water And Drained Well

Directions

    Cook quinoa according to package directions.

    In a skillet, heat olive oil.

    Saute onion, garlic and mushrooms until garlic starts to brown slightly.

    Place raw spinach in pan and begin to saute.

    Cook until spinach is done, add salt and pepper and toss.

    Stir in tuna and cook over heat for just a few minutes to warm tuna.

    Combine with cooked quinoa and serve!
