- 1/2 cups Quinoa, Cooked According To Package Directions
- 1/2 Tablespoons Olive Oil
- 2 Tablespoons Onion, Chopped Fine
- 2 teaspoons Garlic, Minced
- 1 cup Mushrooms, Chopped
- 4 cups Spinach, Raw
- 1/4 teaspoons Salt
- 1/2 teaspoons Ground Black Pepper
- 1 cup Tuna, Packed In Water And Drained Well
Directions

1Cook quinoa according to package directions.

2In a skillet, heat olive oil.

3Saute onion, garlic and mushrooms until garlic starts to brown slightly.

4Place raw spinach in pan and begin to saute.

5Cook until spinach is done, add salt and pepper and toss.

6Stir in tuna and cook over heat for just a few minutes to warm tuna.

7Combine with cooked quinoa and serve!
