Tuna Rice Bake

  • 2 1/2 c. cooked rice
  • 4 eggs
  • 2 Tbsp. butter, melted
  • 2 Tbsp. fresh chopped parsley
  • 1 1/2 c. shredded Cheddar cheese
  • 1 (7 oz.) can tuna, drained and flaked
  • 1 1/4 c. milk
  • 1/2 tsp. pepper
  • 1/2 tsp. salt
  • 1 small tomato, sliced

Directions

    Combine rice, 1 slightly beaten egg, butter and parsley. Firmly press mixture against bottom and sides of a lightly greased 9-inch pie plate.

    Sprinkle 3/4 cup cheese over rice crust.

    Top with half of the tuna; sprinkle with remaining cheese.

    Beat together milk, 3 eggs, salt and pepper; pour over cheese-tuna mixture.

    Sprinkle remaining tuna on top.

    Bake in preheated 375° oven for 45 minutes.

    Arrange tomato slices on top.

    Bake an additional 5 minutes or until knife inserted in center comes out clean.

    Let stand 10 minutes before serving.
