Tuna Rice Pie

  • 1 1/3 c. Minute rice
  • 1 1/3 c. water
  • 1/2 tsp. salt
  • 1 1/2 tsp. butter
  • 1 egg, slightly beaten
  • 1 (7 oz.) can tuna, drained
  • 1 c. grated American or Swiss cheese
  • 3/4 c. milk, scalded
  • 2 eggs
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Directions

    Measure rice into a 9-inch pie pan.

    Bring water, 1/2 teaspoon salt and butter to a boil.

    Stir into rice; cover and let stand 5 minutes.

    Blend in beaten egg.

    Press against bottom and sides, not above rim of pan.

    Sprinkle 1/2 cup cheese into rice crust; top with half of the tuna.

    Repeat layers.

    Blend remaining ingredients.

    Pour over tuna.

    Bake at 400° for 25 minutes.
