Turkey Frame Soup

Ingredients

  • 1 meaty turkey frame
  • 4 tsp. salt
  • 3 tomatoes
  • 1 tsp. dry thyme, crushed
  • 1/2 tsp. dried oregano
  • 1 chopped onion
  • 8 c. fresh vegetables (carrots, corn, green beans and 1 zucchini)
  • 4 c. uncooked noodles

    Cook frame in 5 1/2 quarts water until meat can be removed from bones easily.

    Strain.

    Cook onions and tomatoes in strained broth for 1 hour.

    Add beans and cook 15 minutes; add carrots and herbs.

    Cook an additional 15 minutes.

    Add noodles and salt; cook 5 minutes.

    Add zucchini and cook another 3 minutes.

    Turn off heat and add chopped turkey.
