- turkey carcass
- 1 to 2 celery stalks and leaves
- 1 large onion
- sage, salt and pepper to taste
- cornmeal
Directions

1Break turkey carcass apart.

2Put in large pan and cover with water.

3Bring to a boil and simmer about 2 hours.

4Cool until you can handle.

5Strip bones off all meat.

6Discard bones.

7To broth, add celery stalks and onion.

8Cook until vegetables are tender. Add sage, salt and pepper.

9Bring to a boil.

10Add turkey bits and meal (much like mush).

11Steam for about 30 minutes.
