  • 15 lb. turkey (fresh is the best!)
  • 1 stick butter
  • 3 cloves garlic
  • 1 Tbsp. basil
  • 1 Tbsp. oregano
  • 1 Tbsp. chives
  • 1 Tbsp. parsley or green onion
  • 1 Tbsp. sage

    Preheat covered barbecue grill to 300°.

    Move coals to side and place pan large enough to catch all drippings under the grate. Wash and pat dry bird.

    Blend herbs and butter to a paste. (Experiment with whatever herbs you like or, better yet, fresh herbs!)

    Separate the skin from the breast from the back.
  5. 5
    Insert paste and rub between the skin and meat.

    Grill for 10 minutes per pound.

    Fresh cooks faster!
