- 15 lb. turkey (fresh is the best!)
- 1 stick butter
- 3 cloves garlic
- 1 Tbsp. basil
- 1 Tbsp. oregano
- 1 Tbsp. chives
- 1 Tbsp. parsley or green onion
- 1 Tbsp. sage
Directions

1Preheat covered barbecue grill to 300°.

2Move coals to side and place pan large enough to catch all drippings under the grate. Wash and pat dry bird.

3Blend herbs and butter to a paste. (Experiment with whatever herbs you like or, better yet, fresh herbs!)

4Separate the skin from the breast from the back.

5Insert paste and rub between the skin and meat.

6Grill for 10 minutes per pound.
