  • (12# turkey carcass)
  • 8 c water
  • 3 chicken bullion cubes
  • lots of carrots & celery
  • celery salt
  • salt & pepper
  • bay leaves
  • Louisiana Hot Sauce (use a lot)
  • Use 2 pkgs. Straits Soup Mix
  • 3/4 C barley (put in the last 20 minutes
  • 1-2 cans of stewed tomatoes

Directions

    1. Simmered carcass in 8 cups of water, with onion and ground pepper added. Simmered for an hour partially covered.

    2. Took meat off the carcass. Added it to the soup along with carrots, celery, bay leaves, 4 sprigs of thyme, Hot Sa8ce, tomatoes, and 3 tsp of chicken soup base (Better than Bullion).

    3. Simmered for another hour.

    4. Added barley and simmered another 20 minutes.

    Add lemon as you serve the soup
