  • 8 tablespoons lime juice to taste
  • 4 tablespoons white balsamic vinegar
  • 1 red chili cut into thin rings
  • 2 teaspoons brown sugar to taste
  • 4 tablespoons olive oil
  • 7 ounces canned corn
  • 7 ounces kidney beans canned, drained and rinsed
  • 1/4 cup baby arugula
  • 2/3 cup scallions sliced
  • 4 ounces turkey breast cooked and cut into strips
  • 8 taco shells
  • 8 tablespoons sweet and sour sauce
  • lime slices for garnish

Directions

    For the sauce, combine in a bowl, the lime juice, vinegar, chili and sugar. Season with salt and black pepper. Gradually whisk in the oil.

    Toss together the sweet corn, kidney beans, arugula, scallions, and turkey. Spoon mixture into the taco shells and drizzle the sauce on top of each taco. Arrange on a serving plate and garnish with lime slices.
