- 1 lb ground turkey breast
- 1 garlic clove, chopped
- 1/2 medium onion, chopped
- 1 small carrot, shredded
- 1 celery rib, chopped
- 1/2 cup parsley, chopped
- 1/2 cup walnuts
- 1 egg
- 1 teaspoon thyme
- 1/2 teaspoon salt
- black pepper
- 1 cup tomatoes, chopped
- 2 bay leaves
- 2 slices turkey bacon
Directions

1Preheat the oven to 350.

2Place the turkey, garlic, onion, carrot, celery, and parsley in a mixing bowl.

3Pulse the walnuts in a food processor until they are finely ground.

4Add nuts, egg, thyme, salt, and pepper to the bowl. Mix well.

5Pack the mixture firmly into a loaf pan. Spread the tomatoes over the top, and lay the bay leaves on top of the tomatoes. Arrange the bacon to cover the bay leaves.

6Bake 50 minutes, or until a thermometer registers 160^ and the loaf has pulled away from the edges of the pan.

7Cool 20 minutes and remove the bay leaves before serving.
