Turkey-Walnut Meatloaf

  • 1 lb ground turkey breast
  • 1 garlic clove, chopped
  • 1/2 medium onion, chopped
  • 1 small carrot, shredded
  • 1 celery rib, chopped
  • 1/2 cup parsley, chopped
  • 1/2 cup walnuts
  • 1 egg
  • 1 teaspoon thyme
  • 1/2 teaspoon salt
  • black pepper
  • 1 cup tomatoes, chopped
  • 2 bay leaves
  • 2 slices turkey bacon

Directions

    Preheat the oven to 350.

    Place the turkey, garlic, onion, carrot, celery, and parsley in a mixing bowl.

    Pulse the walnuts in a food processor until they are finely ground.

    Add nuts, egg, thyme, salt, and pepper to the bowl. Mix well.

    Pack the mixture firmly into a loaf pan. Spread the tomatoes over the top, and lay the bay leaves on top of the tomatoes. Arrange the bacon to cover the bay leaves.

    Bake 50 minutes, or until a thermometer registers 160^ and the loaf has pulled away from the edges of the pan.

    Cool 20 minutes and remove the bay leaves before serving.
