Tuscan Bread Salad

  • 1/2 None baguette, quartered, thinly sliced
  • 2 tbsp oil
  • 1 tbsp chopped fresh thyme
  • 3 oz baby spinach leaves
  • 1 1/2 cups loosely packed fresh basil leaves
  • 4 None tomatoes, cut into wedges
  • 3/4 cup pitted Kalamata olives
  • 1 None red onion, thinly sliced
  • None None FOR THE DRESSING
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey

Directions

    Preheat the oven to 400°F. Place bread on a large baking pan. Drizzle with oil and thyme; toss well to coat. Arrange bread in a single layer on pan.

    Bake for 8-10 mins until golden and crisp. Set aside to cool.

    Toss spinach, basil, tomatoes, olives, onion and bread in a large bowl. For the dressing, whisk together all ingredients in a small bowl. Season to taste.
