Tuscan Bread Salad

- 1/2 None baguette, quartered, thinly sliced
- 2 tbsp oil
- 1 tbsp chopped fresh thyme
- 3 oz baby spinach leaves
- 1 1/2 cups loosely packed fresh basil leaves
- 4 None tomatoes, cut into wedges
- 3/4 cup pitted Kalamata olives
- 1 None red onion, thinly sliced
- None None FOR THE DRESSING
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp honey
Directions

1Preheat the oven to 400°F. Place bread on a large baking pan. Drizzle with oil and thyme; toss well to coat. Arrange bread in a single layer on pan.

2Bake for 8-10 mins until golden and crisp. Set aside to cool.

3Toss spinach, basil, tomatoes, olives, onion and bread in a large bowl. For the dressing, whisk together all ingredients in a small bowl. Season to taste.

4Serve salad drizzled with dressing.
