- 4 medium baking potatoes
- 2 Tbsp. butter
- milk
- 1/4 c. sour cream
- 1/4 c. grated cheese (your choice)
- chives
- salt and pepper
- paprika
Directions

1Bake potatoes until tender; cut in halves and scoop out insides.

2Set aside skins; mash insides and add sour cream, chives, butter and enough milk to make stiff consistency.

3Season with salt and pepper to taste.

4Pile mashed potato mixture back into skins; place in baking dish and return to oven.

5Bake at 425° for 20 to 25 minutes.

6Place cheese on top; sprinkle with paprika and heat until cheese melts, 2 to 3 minutes.
