Ingredients
- 4 chicken thighs or 2 breast halves or 2 whole legs
- 2 onions, halved and sliced
- 1 tsp. garlic, chopped
- 1 tsp. dry oregano
- 1/2 lb. fresh green beans
- 16 oz. can chickpeas, drained
- 16 oz. can tomatoes
- salt and pepper to taste
Directions

1Salt and pepper chicken, coat large skillet with spray.

2Put on medium-high until hot.

3Add chicken and cook 3 minutes on each side unti lightly browned.

4Remove chicken.

5Set aside.

6Wipe skillet with paper towel.

7Coat skillet with spray; when hot.

8Add onion and garlic.

9Saute 1 minute.

10Add green beans, chickpeas, tomatoes and oregano; bring to a boil.

11Cover, reduce heat and simmer 30 to 35 minutes.

12Yields two servings.
