  • 1/2 cup finely chopped red onion
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon red wine vinegar
  • 2 serrano chiles, stemmed, seeded and finely chopped
  • 2 cloves garlic, minced
  • One 15.5-ounce can cannellini beans, rinsed and drained
  • One 15.5-ounce can red kidney beans, rinsed and drained
  • Salt and freshly ground pepper

Directions

    In a medium glass bowl, whisk together the onions, cilantro, olive oil, lime juice, vinegar, chiles and garlic.
