- 1/2 c. margarine
- 3/4 c. chopped bell pepper
- 1/3 c. chopped onion
- 1 (17 oz.) can cream-style corn
- 1 (17 oz.) can whole kernel corn, undrained
- 3 eggs, well beaten
- 1 (8 1/2 oz.) pkg. Jiffy cornbread mix
- 4 oz. (1 c.) shredded Cheddar cheese
Directions

1Heat oven to 350°.

2Grease a 2 1/2-quart casserole dish.

3In small skillet, melt margarine.

4Add pepper and onion.

5Saute until crisp and tender.

6In a large bowl, blend corn, eggs and cornbread mix.

7Blend well.

8Add onion and pepper.

9Pour into casserole dish. Sprinkle with cheese.

10Bake at 350° for 55 to 65 minutes or until firm or set.

11Let stand 5 minutes before serving.
