Two-Corn Casserole

  • 1/2 c. margarine
  • 3/4 c. chopped bell pepper
  • 1/3 c. chopped onion
  • 1 (17 oz.) can cream-style corn
  • 1 (17 oz.) can whole kernel corn, undrained
  • 3 eggs, well beaten
  • 1 (8 1/2 oz.) pkg. Jiffy cornbread mix
  • 4 oz. (1 c.) shredded Cheddar cheese

Directions

    Heat oven to 350°.

    Grease a 2 1/2-quart casserole dish.

    In small skillet, melt margarine.

    Add pepper and onion.

    Saute until crisp and tender.

    In a large bowl, blend corn, eggs and cornbread mix.

    Blend well.

    Add onion and pepper.

    Pour into casserole dish. Sprinkle with cheese.

    Bake at 350° for 55 to 65 minutes or until firm or set.
