- 1 cucumber
- 1 bunch mint
- 1/2 lemon juice

Directions

1Peel and grate the cucumber. Place in a colander and salt. Drain for about 15 to 20 minutes.

2Squeeze the cucumber to remove the maximum amount of excess water.

3In a bowl, mix cucumber, chopped mint, lemon juice, and olive oil. Add cheese and mix.

4Serve with slices of toasted bread rubbed with garlic, or bread sticks.
