  • 3 to 4 lb. pastrami round
  • 1-1/2 cup ketchup
  • 2 cups brown sugar

Directions

    Preheat oven to 300F.

    Wash off the pastrami round with cold water and pat dry.

    Place the round in a roasting pan and smear it with ketchup.

    Then pack on the brown sugar to get it to stay on top of the round.

    Cover the pan with foil and put in the oven for 2 hours.

    Pull off the foil after the 2 hours and roast for 30 minutes uncovered.

    Let it rest for 10 minutes.

    Slice against the grain as thinly as possible and serve.
