- 3 to 4 lb. pastrami round
- 1-1/2 cup ketchup
- 2 cups brown sugar
Directions

1Preheat oven to 300F.

2Wash off the pastrami round with cold water and pat dry.

3Place the round in a roasting pan and smear it with ketchup.

4Then pack on the brown sugar to get it to stay on top of the round.

5Cover the pan with foil and put in the oven for 2 hours.

6Pull off the foil after the 2 hours and roast for 30 minutes uncovered.

7Let it rest for 10 minutes.

8Slice against the grain as thinly as possible and serve.
