Upside Down Orange Cake

Ingredients
- 1 1/8 cups butter
- 3 teaspoons grated orange rind
- 1 1/8 cups sugar
- 2 cups self raising flour
- 1/2 teaspoon ground cinnamon
- 1/2 cup milk
- 5 eggs
- 1 1/4 cups water
- 3/4 cup sugar
- 2 oranges sliced
Directions

1Combine water and sugar in a large pan over a low heat, without boiling until the sugar dissolves. When the syrup thickens slightly add the oranges in batches gently. Let it simmer gently for about 10min uncovered until the rind is tender. Carefully remove the slices and reserve the syrup.

2Place the slices over base of prepared pan. Add some extra water to the syrup if you find it too little, and simmer till it turns light honey color. Pour enough syrup over the slices in pan.

3For the cake.

4Preheat the oven to 180 deg. cel. Grease a 8in pan.

5Sieve the flour and baking powder.

6Combine all ingredient in a mixer and beat with an electric mixer on low speed until combined. Continue mixing until the mixture is smooth and light in color.

7Pour mixture in pan and bake for 45 min and test with a skewer when it comes out clean.

8Cool the cake and gently revert cake on a wire rack. Prick the cake with a tooth pick all over and pour any left over syrup over the cake.
