- 2 1/2 to 2 3/4 pound shoulder veal, boned & flattened
- 1 1/4 pound top round, grnd
- 1/4 pound lean pork grnd
- 2 Large eggs
- 3/4 c. bread crumbs
- 1 tbsp. ketchup
- 1 teaspoon mustard
- 2 to 3 teaspoon parsley, minced
- 1/2 c. skim lowfat milk
- Salt & pepper to taste
- 1 3/4 c. spaghetti sauce, your own or possibly jar
Directions

1Mix beef and pork with Large eggs, crumbs, ketchup, mustard, parsley, lowfat milk, salt and pepper.

2Spread onto veal.

3Roll up carefully like a jelly roll.

4Tie with string.

5Place in casserole and top with spaghetti sauce.

6Cover, bake at 350 degrees for 1 1/2 to 2 hrs.
