  • vegetable cooking spray
  • 4 oz. fresh shiitake mushrooms, sliced
  • 1/4 c. sliced green onions
  • 1 c. torn fresh spinach
  • 1 c. seeded diced plum tomatoes
  • 1/4 c. minced fresh parsley
  • 2 Tbsp. canned low-sodium chicken broth (undiluted)
  • 3 oz. linguine, uncooked
  • 3 Tbsp. fresh grated Parmesan cheese

Directions

    Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.

    Add mushrooms and green onions; saute 3 minutes.

    Add spinach, tomatoes, parsley and chicken broth; cook 1 minute.

    Set aside and keep warm.

    Cook pasta according to package directions, omitting salt and fat; drain.

    Place pasta in a large bowl; add cheese, tossing gently.
