- vegetable cooking spray
- 4 oz. fresh shiitake mushrooms, sliced
- 1/4 c. sliced green onions
- 1 c. torn fresh spinach
- 1 c. seeded diced plum tomatoes
- 1/4 c. minced fresh parsley
- 2 Tbsp. canned low-sodium chicken broth (undiluted)
- 3 oz. linguine, uncooked
- 3 Tbsp. fresh grated Parmesan cheese
Directions

1Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.

2Add mushrooms and green onions; saute 3 minutes.

3Add spinach, tomatoes, parsley and chicken broth; cook 1 minute.

4Set aside and keep warm.

5Cook pasta according to package directions, omitting salt and fat; drain.

6Place pasta in a large bowl; add cheese, tossing gently.
