  • vegetable oil
  • 1 onion peeled and minced
  • 1 leek minced
  • 1/2 zucchini diced
  • 1/2 eggplant diced
  • 1 green bell pepper seeded and diced
  • 1 red bell pepper seeded and diced
  • 1 garlic clove peeled and minced
  • 2 carrots peeled and diced
  • salt
  • ground black pepper
  • 2 eggs
  • breadcrumbs

Directions

    Saute the onion, leek, zucchini, eggplant, bell peppers, garlic, and carrots in a couple of tablespoons of oil for about 5 minutes. Add salt and pepper to taste.

    Once softened, mix the vegetables with 1 egg and some breadcrumbs until a loose dough forms.

    Pull off sections of the dough and roll into croquette balls. Refrigerate 1 hour.

    Coat the croquettes in beaten egg, and then more breadcrumbs.

    Fry in plenty of hot oil.
