Vegetable Croquettes

- vegetable oil
- 1 onion peeled and minced
- 1 leek minced
- 1/2 zucchini diced
- 1/2 eggplant diced
- 1 green bell pepper seeded and diced
- 1 red bell pepper seeded and diced
- 1 garlic clove peeled and minced
- 2 carrots peeled and diced
- salt
- ground black pepper
- 2 eggs
- breadcrumbs
Directions

1Saute the onion, leek, zucchini, eggplant, bell peppers, garlic, and carrots in a couple of tablespoons of oil for about 5 minutes. Add salt and pepper to taste.

2Once softened, mix the vegetables with 1 egg and some breadcrumbs until a loose dough forms.

3Pull off sections of the dough and roll into croquette balls. Refrigerate 1 hour.

4Coat the croquettes in beaten egg, and then more breadcrumbs.

5Fry in plenty of hot oil.
