- 10 lasagne noodles
- 1 lb. fresh spinach, rinsed
- 2 c. sliced fresh mushrooms
- 1 c. grated carrot
- 1/2 c. chopped onion
- 1 Tbsp. cooking oil
- 1 (15 oz.) can tomato sauce
- 1 (6 oz.) can tomato paste
- 1 1/2 tsp. dried oregano
- 16 oz. cream-style cottage cheese, drained
- 16 oz. grated Monterey Jack cheese
- grated Parmesan cheese
Directions

1Cook noodles in boiling water for 8 to 10 minutes; drain. Steam spinach, covered.

2Reduce heat when steam forms.

3Cook 3 to 5 minutes.

4Saute mushrooms, carrot and onion in hot oil until tender.

5Stir in tomato sauce, tomato paste and oregano.
