  • 10 lasagne noodles
  • 1 lb. fresh spinach, rinsed
  • 2 c. sliced fresh mushrooms
  • 1 c. grated carrot
  • 1/2 c. chopped onion
  • 1 Tbsp. cooking oil
  • 1 (15 oz.) can tomato sauce
  • 1 (6 oz.) can tomato paste
  • 1 1/2 tsp. dried oregano
  • 16 oz. cream-style cottage cheese, drained
  • 16 oz. grated Monterey Jack cheese
  • grated Parmesan cheese

Directions

    Cook noodles in boiling water for 8 to 10 minutes; drain. Steam spinach, covered.

    Reduce heat when steam forms.

    Cook 3 to 5 minutes.

    Saute mushrooms, carrot and onion in hot oil until tender.

    Stir in tomato sauce, tomato paste and oregano.
