Ingredients
- 1/2 c. water
- 2 Tbsp. butter or margarine
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. garlic powder
- 3 medium carrots, sliced
- 2 medium green peppers, cut up
- 1 large onion, cut into wedges
- 2 medium yellow squash, sliced
- 2 medium zucchini, sliced
- 1 lb. fresh mushrooms, sliced
- 1 c. shredded Cheddar cheese
Directions

1Combine the first five ingredients in a Dutch oven.

2Bring to a boil.

3Add carrots.

4Cover, reduce heat and simmer 5 minutes. Add pepper, onion, yellow squash and zucchini.

5Cover and simmer 10 minutes.

6Stir in mushrooms; cover and simmer 5 more minutes. Drain.

7Place vegetables in lightly greased 13 x 9 x 2-inch baking dish.

8Sprinkle with cheese.

9Broil just until cheese melts. Yields 8 servings.
