- 1/2 lb. sliced mushrooms (about 2 c.)
- 3 small zucchini, sliced (about 3 c.)
- 2 medium green peppers, cut in strips
- 1 c. sliced onion
- 1 large clove garlic, minced
- 1/2 tsp. basil leaves, crushed
- 2 Tbsp. salad or olive oil
- 1 can (10 3/4 oz.) tomato soup
- 1/2 tsp. salt
- grated Parmesan cheese
Directions

1In large heavy pan, brown mushrooms and cook zucchini, green pepper and onion with garlic and basil in oil 5 minutes.

2Add soup and salt.

3Cover; cook over low heat 15 minutes.

4Stir occasionally.

5Uncover; cook 5 minutes more.

6Serve with Parmesan.

7Makes about 6 cups.
