  • 2 green peppers
  • 2 medium onions
  • 1 lb. fresh mushrooms
  • 4 Tbsp. butter
  • 1 eggplant
  • 2 medium tomatoes
  • 1 (10 oz.) pkg. frozen peas, thawed
  • salt and pepper to taste

Directions

    Cut eggplant into 1 1/2-inch cubes and remainder of vegetables into large chunks.

    Combine all ingredients.

    Place in dish; add butter.

    Cover and bake for 30 minutes at 350°.
