- 1 lb. fresh mushrooms, sliced
- 1 onion, sliced
- 2 zucchini or yellow squash, sliced
- 1 green pepper, sliced
- 4 Tbsp. butter
- 1 tsp. salt
- 1/4 tsp. pepper
- dash of garlic powder
- 1 c. mayo
- 1 c. Mozzarella cheese
- 1 (10-inch) pie shell
- 1 tomato, sliced
Directions

1Bake pie crust at 325° for 20 minutes.

2Saut vegetables in butter until crisp but not soft.

3Drain well.

4Add seasonings. Place tomato, sliced, in bottom of pie crust.

5Add vegetables. Spread mayo-cheese mixture over vegetables.

6Bake, uncovered, for 45 minutes to 1 hour.
