- 2 medium or large yellow squash
- 2 medium or large zucchini squash
- 1 or 2 onions
- 2 small cans mushrooms
- 4 eggs, beaten with small amount milk
- Swiss cheese
- Cheddar cheese, shredded
- sliced tomatoes
Directions

1Bake pie crusts lightly.

2Slice all vegetables except mushrooms and steam.

3Drain and add mushrooms.

4Line crusts with Swiss cheese.

5Fill crusts with vegetables.

6Add egg mixture, divide between the 2 pies.

7Bake at 350° for 20 minutes.

8Cover with sliced tomatoes and add Cheddar cheese.

9Bake for another 10 to 15 minutes.
