- 1 (9-inch) deep dish, unbaked pie shell
- 8 oz. pkg. shredded Mozzarella cheese
- 10 oz. chopped spinach or broccoli
- 1/4 c. thinly sliced scallions
- 3 eggs
- 15 oz. Ricotta cheese
- 1/4 c. milk
- 2 Tbsp. cornstarch
- 1 1/2 tsp. Italian seasonings
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. garlic
- 2 Tbsp. grated Parmesan or Romano cheese
Directions

1Heat oven to 375°.

2Sprinkle Mozzarella cheese, spinach or broccoli and scallions on top of unbaked pie shell.

3Combine eggs, Ricotta cheese, milk, cornstarch, Italian seasonings, salt, pepper and garlic.

4Beat well and pour over cheese mixture in pie shell. Sprinkle grated cheese on top.

5Bake 40 minutes or until knife inserted in center comes out clean.

6Let stand 10 minutes before serving.
