- 1 1/3 c. Minute rice
- 1 1/2 c. cooked, mixed vegetables
- 1 1/2 c. boiling water
- 2 Tbsp. finely chopped onion
- 3 Tbsp. butter
- salt and pepper to taste
Directions

1Combine rice and vegetables in boiling water in saucepan. Simmer for 5 minutes.

2Saute onion in butter in skillet.

3Stir into rice mixture.

4Season to taste.

5Serve immediately.
