  • 1 bunch celery, stalks and leaves
  • 6 carrots, unpeeled
  • 1 c. okra or squash
  • 1 c. fresh spinach
  • 1 c. fresh parsley
  • 2 large potatoes, unpeeled
  • 1 qt. tomatoes
  • 2 Tbsp. sweet basil
  • 2 1/2 qt. water

Directions

    Chop all vegetables.

    Place all ingredients in 6-quart saucepan.

    Bring to a boil, turn down to low.

    Simmer until vegetables are tender, 25 to 35 minutes.
